Instructions

  1. In a medium saucepan, combine Water, Unsalted butter and Salt. Bring to a rolling boil over medium heat.

  2. Remove from heat and add all All-purpose flour at once. Stir vigorously until dough forms a ball and pulls away from sides.

  3. Let dough cool for 5 minutes, then beat in Large eggs one at a time until smooth and pipeable.

  4. Heat Vegetable oil to 180C in a deep pot. Pipe 10cm strips directly into oil using a star tip.

  5. Drain churros, then toss immediately in mixture of Granulated sugar and Ground cinnamon.

  6. For sauce: gently heat Heavy cream until steaming, pour over chopped Dark chocolate and stir until silky smooth.
