Saffron Chicken and Rice Pilaf

  1. Crush Saffron threads between your fingers into a small bowl. Pour in Hot water for blooming saffron, stir, and let it stand. In a separate bowl, whisk Plain full-fat yogurt, Fresh lemon juice, 1 tsp of Kosher salt, half of Ground turmeric, and half of Freshly ground black pepper. Add Boneless, skinless chicken thighs and coat thoroughly.

  2. Cover the marinated Boneless, skinless chicken thighs and refrigerate. Rinse Long-grain basmati rice under cool water until the runoff is nearly clear, then soak it in fresh water while the chicken marinates.

  3. Bring Water for parboiling rice to a vigorous boil in a large pot. Stir in 1 tsp of Kosher salt. Drain the soaked Long-grain basmati rice, add it to the boiling water, and cook until the outside is tender but the center remains firm.

  5. Heat half of Neutral oil in a wide heavy-bottomed pot over medium-high heat. Lift Boneless, skinless chicken thighs from its marinade, reserving the marinade, and brown the chicken in a single layer. Turn once, then transfer it to a plate.

  6. Add the remaining Neutral oil to the pot. Add Garlic cloves, minced and cook briefly. Return the chicken and its reserved marinade to the pot, cover, and simmer until the chicken is cooked through.

  7. Remove the chicken and sauce from the pot. Wipe the pot clean if needed. Melt Unsalted butter with the remaining Neutral oil over medium heat. Gently mound half of Long-grain basmati rice over the potato, spoon half of the bloomed Saffron threads mixture over it, then add the remaining rice and saffron mixture. Poke 5 or 6 steam holes through the rice with the handle of a wooden spoon.
